Potatoes Of Importance
- 1 potato
- salt
- ground black pepper
- flour
- vegetable oil
- 1 onion peeled and chopped
- 1 leek chopped
- 2 garlic cloves peeled and minced
- 1 cup chicken beef, or vegetable broth
- parsley
- Parmesan cheese grated
- Preheat the oven to 180 degrees Celsius.
- Cut the potatoes into 1- to 2-centimeter slices. Season with salt and pepper and coat with flour.
- Fry in plenty of hot oil in a skillet on medium-high heat. Drain the excess oil on paper towel. Set aside.
- Add a tablespoon of oil to another skillet on low heat. Add the onion, leek, and garlic. Saute over low heat.
- Add the broth and some of the parsley. Cook for 10 minutes.
- Put the potatoes in a baking dish, add the vegetables and cover with the broth. Bake for 15 to 20 minutes until the potatoes are tender.
- Add Parmesan cheese on top and bake until the cheese melts.
