Potatoes Of Importance

  1. Preheat the oven to 180 degrees Celsius.
  2. Cut the potatoes into 1- to 2-centimeter slices. Season with salt and pepper and coat with flour.
  3. Fry in plenty of hot oil in a skillet on medium-high heat. Drain the excess oil on paper towel. Set aside.
  4. Add a tablespoon of oil to another skillet on low heat. Add the onion, leek, and garlic. Saute over low heat.
  5. Add the broth and some of the parsley. Cook for 10 minutes.
  6. Put the potatoes in a baking dish, add the vegetables and cover with the broth. Bake for 15 to 20 minutes until the potatoes are tender.
  7. Add Parmesan cheese on top and bake until the cheese melts.
