Creamy Coconut Chai
- 1/2 cup full fat coconut milk
- 3 whole cardamom pods
- 2 slices fresh ginger lightly mashed
- 1 cinnamon stick
- tea leaves Loose chai, enough for 2 cups
- 3 teaspoons honey or light agave nectar
- In the 1.5-Quart Saucepan from your KitchenAid(R) Stainless Steel 8-Piece Set, combine the coconut milk, cardamom pods, ginger, and cinnamon. Bring to a near boil, then reduce the heat and let the mixture simmer for 2-3 minutes, until fragrant. Remove from heat and let it steep 5 minutes. Strain through a mesh sieve into a small pitcher or spouted measuring cup.
- Meanwhile, brew two, 10-ounce cups of tea on the KitchenAid(R) Glass Tea Kettle's "black" tea setting. Divide the brewed tea into serving glasses, then top with the infused coconut milk. Taste and add honey or agave to desired sweetness. Enjoy warm.
