Pork Lettuce Cups - San Choy Bau
- 1 tablespoon peanut oil
- 1 1/2 pounds ground pork
- 2 cloves garlic crushed
- 7 ounces water chestnuts drained and finely chopped
- 1 red pepper deseeded and finely chopped
- 4 green onions finely sliced, plus extra, for garnish
- 2 tablespoons light soy sauce plus extra, to serve
- 2 tablespoons brown sugar
- 1 tablespoon fish sauce optional
- 1 lime juiced
- 8 whole lettuce leaves iceberg
- cilantro leaves fresh, for garnish
- Heat oil in wok or frying pan. Add pork and garlic and stir-fry over high heat for 7 mins. Add water chestnuts, pepper and green onions and mix well. Add soy sauce, sugar, fish sauce (if using) and lime juice and cook for 2 mins.
- Taste and add a little more sugar, soy, fish sauce or lime juice if required.
- Scoop mix into lettuce leaves and garnish with a sprinkling of green onion and cilantro. Serve warm with soy sauce on the side.
