Tiramisu Mousse
- 3 egg yolks
- 2/3 cup powdered sugar
- 1 15/16 cups mascarpone cheese
- 2 tablespoons instant coffee
- 3 tablespoons hot water
- 5/8 cup heavy whipping cream
- 2 egg whites
- salt
- cocoa powder
- cookies as a garnish
- Beat the egg yolks with the powdered sugar until creamy and white.
- Mix the mascarpone cheese in well.
- Separately, mix the instant coffee with water and, once combined, add to the bowl.
- Separately, beat the heavy cream until whipped into soft peaks. Carefully fold into the mixture.
- Beat the egg whites with a little salt into soft peaks. Fold this into the mixture.
- Pour into a mold or individual glasses and refrigerate at least an hour.
- Garnish with cocoa powder and cookies.
