White Chocolate-Speculoos Truffles
- 7/8 cup cookies speculoos
- 1/2 cup confectioner's sugar
- 1 egg yolk
- 1 tablespoon milk
- 3 1/2 tablespoons softened butter
- 1 1/8 cups white chocolate
- 5 3/4 tablespoons cookies speculoos
- In a food processor, grind the speculoos cookies to a fine powder.
- Add confectioner's sugar, then mix the eggyolk, milk, and butter.
- Mix until smooth.
- Transfer to a closed plastic box with a lid in refrigerator for 2 hours.
- With your hands, shape small balls and refrigerate for 15 minutes.
- Melt the white chocolate and grind the remaining speculoos cookies.
- Dip the truffles in white chocolate and roll them quickly in the ground speculoos.
- Arrange them on a parchment paper until set.
- Set aside in refrigerator until serving time.
