White Chocolate-Speculoos Truffles

  1. In a food processor, grind the speculoos cookies to a fine powder.
  2. Add confectioner's sugar, then mix the eggyolk, milk, and butter.
  3. Mix until smooth.
  4. Transfer to a closed plastic box with a lid in refrigerator for 2 hours.
  5. With your hands, shape small balls and refrigerate for 15 minutes.
  6. Melt the white chocolate and grind the remaining speculoos cookies.
  7. Dip the truffles in white chocolate and roll them quickly in the ground speculoos.
  8. Arrange them on a parchment paper until set.
  9. Set aside in refrigerator until serving time.
