Authentic Hungarian Christmas Muffins

  1. Mix 1/2 flour, sugar, salt and yeast in bowl.
  2. Heat milk in heavy saucepan until warm.
  3. Mix with remaining flour, adding more, if needed, to form smooth ball.
  4. Turn onto floured board and knead 5 minutes.
  5. Allow to rest in an oiled bowl, covered, approximately 1 to 2 hours.
  6. When dough doubles, turn onto clean buttered counter.
  7. Add raisins, nuts, coconut, vanilla and almond extract. Using a chopper or a chef's knife, chop into bits and coarse chunks.
  8. Put a handful in greased muffin pan (until cup is 1/2 full).
  9. Allow to rest and rise 1 hour.
  10. Bake 20 to 25 minutes at 350u0b0 until golden.
  11. Sprinkle with confectioners sugar while warm.
