- 12 boneless chicken thighs
- 1 cup flour unseasoned
- 2 eggs - beaten -with a splash of water
- 2 cups seasoned flour
- vegetable oil for frying
- 1 teaspoon brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon hot curry powder
- 1 teaspoon ground cumin
- 24 ounces frozen blueberries
- 1 cup sugar
- water

- 1 tablespoon flour
- 1 teaspoon cornstarch
- 1 tablespoon lemon juice
- 1 tablespoon hot sauce your favorite
- 1 lime
- 1 jalapeno large, - chopped
- 2 inches fresh ginger piece of, - grated
- 1 dash cinnamon
- 1 dash nutmeg
- 1 dash cumin
- 1 dash hot curry powder

- Prepare three shallow dishes with the unseasoned flour, egg wash and seasoned flour. Dip the thighs first in the unseasoned flour then the egg wash and finally in the seasoned flour.
- Heat a large frying pan with the oil, about 1/2 inch. Place the chicken thighs in the hot oil, turning once. Place on a plate with a paper towel to absorb any excess oil.
