Celestial Potato Soup
- 2 medium potatoes, peeled and diced
- 2 carrots, grated
- 1 rib celery, finely chopped
- 1 turnip, peeled and diced
- 3 Tbsp. minced onion
- 1 Tbsp. dried vegetable flakes
- salt and pepper to taste
- 3 Tbsp. butter
- 2 Tbsp. flour
- 1 1/2 c. milk
- 1 1/2 c. sour cream
- 3 slices bacon, fried and crumbled
- Combine potatoes, carrots, celery, turnip, onion, vegetable flakes, salt and pepper; cover with water and simmer 30 minutes. In another saucepan, melt butter and stir in flour; add a small amount of liquid from potato mixture to form a paste.
- Cool and stir in milk and sour cream.
- When vegetables are cooked, mash or puree them and add flour and milk mixture.
- Do not boil.
- Serve; sprinkle with bacon.
- Serves 6.
