Swedish Bread Biscuits
- 2 1/16 tablespoons fresh yeast
- 25 ounces cold water
- 75 cream fresh
- 9/16 tablespoon salt
- 3/4 tablespoon sugar
- 4 cups white flour
- 1 cup rye flour
- In a bowl, add the crumbled yeast, 25 ounces of cold water, cream, salt, and sugar. Mix well and let rest for 1 hour.
- Add the flours, and use an electric mixer to mix for 7 to 8 minutes until a smooth dough.
- Cover the dough with plastic wrap and refrigerate for 50 minutes. The dough will rise.
- On a floured surface, roll out the dough to 3 millimeters thick and spread on a baking sheet lined with parchment paper. Prick the dough with a fork. Cover with plastic wrap and refrigerate for another 10 minutes. The dough should not be too thick, because the biscuits will swell during cooking.
- Cut out shapes with a cookie cutter, prick the dough again, and let stand for about 30 minutes.
- Heat a frying pan without grease, and fry the biscuits for 3 minutes on each side.
- Garnish to taste with smoked salmon, shrimp, or with jam for breakfast.
