Ginger Chicken With Peanuts
- 2 tablespoons soy sauce
- 2 tablespoons sake
- 1 tablespoon seasoning chicken
- 1 teaspoon chilli sauce
- 3 dashes salt and pepper
- 250 grams chicken breast cut in 1cm cubes
- 1 bowl frozen vegetables
- 1 tablespoon flour
- 2/3 cup water
- 1/2 cup salted roasted peanuts
- 1 tablespoon soy sauce
- 1 teaspoon fresh ginger minced or finely chopped
- 1 tablespoon pickled ginger finely chopped Japanese
- 2 tablespoons oil
- Mix first 5 ingredients to make the marinade.
- Add chicken to the marinade, and mix well.
- Leave for 20 minutes.
- Mix flour in water until smooth.
- Defrost vegetables.
- Preheat oil in pan.
- Scoop chicken out of marinade and stir-fry until cooked.
- Add in the fresh ginger and the remaining marinade.
- Stir for 30 seconds.
- Add the flour mixture, vegetables, pickled ginger and peanuts.
- Mix well, bring to a boil, then cover and simmer for 5 minutes on low heat.
- Serve over rice.
