Ham And Cheese Casserole
- 2 c. milk
- 4 oz. Cheddar cheese, shredded (1 c.)
- 2 large eggs, yolks and whites separated
- 1 (10 oz.) pkg. frozen chopped spinach, collard greens or kale, thawed and squeezed dry
- 4 oz. ham, cut into 1/4-inch cubes (3/4 c.)
- 1/3 c. sliced green onions
- 1/2 c. instant Cream of Wheat
- Heat oven to 350u0b0.
- Grease a 1 1/2-quart deep baking dish. Heat milk in 1-quart saucepan over medium heat just until small bubbles start to form around edge.
- (Do not boil!)
- Add cereal and stir about 30 seconds until mixture starts to thicken.
- Remove from heat; add cheese and stir until melted.
- Add egg yolks; stir until blended.
- Stir in spinach, ham and onions.
- In a small bowl, beat egg whites with electric mixer until soft peaks form.
- Fold egg whites into Cream of Wheat mixture with rubber spatula.
