Kande Pohe
- 2 cups poha thin, flattened rice
- 2 tablespoons oil
- 2 potatoes diced
- 1 onion chopped
- 4 curry leaves
- 1 tablespoon mustard seeds
- 1 pinch asafetida
- 4 green chillies chopped
- 1 teaspoon turmeric powder
- 1 tablespoon salt
- 1 tablespoon lemon juice
- salt as per taste
- coriander leaves Chopped, for garnishing
- Soak poha in water. After 5 minutes drain the water and keep it aside.
- Heat oil in a pan.
- Add mustard seeds, asafetida and curry leaves.
- Add chopped onions and saute till they become translucent.
- Now add potatoes, chillies and turmeric powder.
- Cover the pan and let the potatoes cook.
- After 10 minutes add the soaked poha.
- Add salt and sugar to it.
- If you feel that the poha seems to be bit dry you can sprinkle some water from top.
- Let it cook for 5 minutes.
- Add lemon juice and mix everything well.
- Sprinkle coriander leaves and serve it hot with a slice of lemon.
