Red Cajun Bean Soup
- 1 lb. dried red beans
- 2 qt. water
- 1 bunch green onions, chopped
- 2 large pods garlic, crushed
- 2 Tbsp. salt
- 1 tsp. black pepper
- 1 Tbsp. Worcestershire sauce
- 1 small (4 oz.) can tomato sauce
- 1 lb. bulk sausage (hot if you want hot soup)
- 1/2 lb. salt pork
- 3 c. chopped onion
- 1 c. chopped bell pepper
- 1 c. parsley, chopped
- 1 tsp. red pepper
- 3 generous dashes Tabasco
- 1/4 tsp. oregano
- 1/4 tsp. thyme
- Cook beans in salt pork and salted water for approximately 45 minutes.
- Add all ingredients except sausage.
- Cook 1 hour; add sausage and cook 45 minutes or longer.
- This is a hot receipt.
