Spinach Balls A La Liz
- 2 (10 oz.) boxes frozen chopped spinach
- 2 onions, minced into tiny pieces
- 2 c. herb dressing mix (Pepperidge Farm is best)
- 5 eggs, slightly beaten
- 3/4 c. melted oleo or butter
- 1 clove garlic, crushed
- 1 1/2 tsp. thyme
- 1 1/2 tsp. pepper
- 1/2 c. grated Parmesan cheese
- Cook frozen spinach as directed.
- Drain.
- Squeeze spinach by hand to remove all moisture.
- This takes a long time.
- Mix all ingredients thoroughly with hands.
- Refrigerate about 3 hours or overnight.
- Roll into balls, using rounded teaspoonful per ball. Leave plain or at this point, you may roll balls in a bowl filled with about 2 cups grated Parmesan cheese.
- Place on cookie sheets and bake for 20 minutes or until lightly browned.
- This bakes LOTS of spinach balls but never fear, they will quickly disappear.
- Your guests will love them!
