Chicken With Garlic And Arbol Chili
- 2 chicken breast halves skinless and deboned
- 3 cloves garlic
- 1/4 teaspoon salt
- 1/2 teaspoon lemon pepper seasoning
- 1/2 teaspoon chili de arbol flakes, or crushed red pepper flakes
- 1 tablespoon olive oil
- cooking oil spray
- 3 cups lettuce
- 1 tomato cut into fourths
- pickles to taste
- 2 tablespoons Parmesan cheese grated
- 1 lime
- 1 tablespoon olive oil
- salt
- ground black pepper
- Cut the chicken into strips.
- Mince the garlic and mix with the salt, lemon pepper, and chili. Add the olive oil and mix well.
- Cover the chicken strips with this marinade and let it rest for 30 minutes in the refrigerator.
- Spray cooking oil in a skillet and place over medium-high heat. Add the chicken strips and cook until golden brown.
- For the salad, add the lettuce, tomato, and pickles. In an airtight container, add the lime juice, olive oil, and salt and pepper to taste. Close the container and shake vigorously. Dress the salad with the vinaigrette.
- Add the chicken strips on top and sprinkle with Parmesan cheese.
