Bean And Lentil Caprese Salad
- 1 cup truRoots Sprouted Bean & Lentil Medley
- 4 cups water
- 1/2 cup Italian dressing
- 1 cup grape tomatoes halved
- 1/2 cup fresh mozzarella cheese pearls or diced fresh mozzarella cheese
- 3 tablespoons fresh basil thinly sliced
- COOK bean & lentil medley in water according to package cooking instructions. Drain.
- COMBINE medley and dressing in medium bowl. Stir until blended.
- STIR in tomatoes and cheese. Cover and chill until ready to serve. Stir in basil just before serving.
- Microwave Cooking Directions
- MICROWAVE water in large microwave-safe bowl on HIGH 15 minutes or until just beginning to boil. Stir in bean & lentil medley. Cover tightly with plastic wrap and microwave on HIGH 5 minutes. Let stand 15 minutes to allow beans to soften. Stir. Cover and microwave an additional 2 minutes. Let stand 5 minutes or until tender. Drain. Proceed as directed above.
