Sunshine State Mango Cake

  1. Prepare cake according to directions for Upside Down Cake EXCEPT:
  2. Substitute 1/4 cup rum for part of the required water or, if using extract, balance accordingly.
  3. Substitute Sour Cream or Buttermilk for part of the required oil.
  4. Beat until Smooth.
  5. Add Cinnamon and swirl in.
  6. Toss Mangoes in orange juice and set aside.
  7. Grease/Spray Bundt pan and sprinkle bottom with Dark Brown Sugar.
  8. Pour Mango mixture over Dark Brown Sugar.
  9. Pour Cake mixture over Mangoes.
  10. Drizzle top of cake with Pancake Syrup.
  11. Bake 10-12 minutes more than suggested on packaging.
  12. Remove Cake and Dust with Confectioner's Sugar-cool completely.
  13. Flip Cake and remove from pan.
  14. Serve: Topped with coconut if desired
  15. With a swirl of rum-spiked whipped topping
  16. With Fresh Blueberries on the side
  17. Sprinkled with Brown Sugar Cinnamon Crumb Topping
  18. Sprinkled with Granola
  19. With a side of Pineapple or Mango Chutney
