Doritos Chicken Strips

  1. Cut chicken into thin strips, about 1/2 inch.
  2. Put chicken in a bowl & pour in the buttermilk.
  3. Stir to coat the chicken, then cover bowl and refrigerate for about 2 hours.
  4. Crush the Doritos so the texture resembles coarse bread crumbs. Set aside.
  5. Place flour & cayenne pepper, if using, in one bowl & eggs in another. Whisk eggs so they are well scrambled.
  6. Preheat over to 400F & spray baking sheet/dish with cooking spray, if using.
  7. Set up the bowls: 1.. bowl with the chicken; 2. bowl with flour; 3. bowl with beaten eggs; 4. bowl with crushed Doritos.
  8. Drain excess buttermilk off chicken and place in the flour. Once well coated, shake off excess flour & place in the eggs. Then place in crushed Doritos.
  9. Once completely coated, place chicken on baking sheet/dish.
  10. Bake for 15-20 minutes, turning halfway through.
