Avocado Cannelloni
- 1 tablespoon vegetable oil
- 7 ounces shrimp
- 3 1/2 ounces turkey
- 2 tablespoons mayonnaise
- salt
- 1 avocado
- Add the oil to as skillet on medium heat. Add the shrimp and turkey and saute for 3 minutes. Remove from the heat and set aside.
- Once cool, mix with the mayonnaise and a pinch of salt and place into the refrigerator.
- Cut a piece of plastic wrap and place it on top of a cutting board. Thinly slice the avocado, make the slices even and about the same size.
- Place the slices in a row, making them overlap. Cut another piece of plastic wrap and place it over the cannelloni and flip it over. Remove the top plastic wrap.
- Stuff the cannelloni, being careful not to put too much stuffing.
- Roll the cannelloni with the help of the plastic wrap. Once it is rolled, place in the refrigerator for an hour.
