Yorkshire Devils
- 1 (4 1/2 oz.) can deviled ham
- 2 Tbsp. fine dry bread crumbs
- 1/8 tsp. ground sage
- 1 Tbsp. minced scallions
- 1/2 c. unsifted flour
- 1/4 tsp. salt
- dash of pepper
- 1 egg
- 1 c. milk
- 3 tsp. oil
- In a small mixing bowl, mix together deviled ham, bread crumbs, sage and scallions.
- Roll into 12 even size balls (about 1 teaspoon to 1 1/2 teaspoons each).
- In a medium mixing bowl, stir together the flour and salt.
- Make a well in center and break egg into it. Gradually beat in the milk, keeping smooth.
- Batter will be thin. Put 1/4 teaspoon oil in each of 12 muffin pan cups (1/3 cup capacity).
- Then add a ball of deviled ham mixture to each.
- Bake in a preheated 425u0b0 oven for 2 minutes.
- Remove from oven and pour some batter over each ball.
- Bake in 425u0b0 oven until browned and somewhat puffed, about 25 minutes.
- Serve hot.
