Baked Apples Streusel
- 2 apples medium - large, firmer varieties work better
- 1 teaspoon cinnamon divided
- 1 tablespoon butter divided, optional, omit if you want a vegan recipe!
- 4 tablespoons rolled oats
- 1 teaspoon sugar brown or turbinado works great
- 1 tablespoon chopped nuts like slivered almonds
- 1 tablespoon coconut flakes optional
- 1 tablespoon maple syrup or honey
- Preheat the oven to 350 F.
- Core the apples by cutting the core out from the top but do not cut all the way (leave about 1/2-3/4 at the base of the apple)
- In a small bowl, combine 1/2 teaspoon cinnamon and 1 teaspoon sugar.
- Place the apples in a baking dish and sprinkle the cinnamon sugar mix into the inside, along with a very tiny pat of butter in each (About 1/4 teaspoon). Omit the butter for a vegan recipe.
- Bake for 20 minutes.
- While the apples are baking, prepare the streusel topping by combining the oats, nuts, maple syrup/honey 1/2 teaspoon cinnamon, and 1/2 teaspoon of butter (or double the maple syrup). Microwave for 30 seconds and stir until combined.
- Once the apples have baked for 20 minutes, open the oven and spoon the streusel mixture into the center of each apple.
- Bake for an additional 15-20 minutes until the apples are soft and the topping is crunchy.
- Remove from the oven and enjoy - serve with a scoop of vanilla ice cream if desired!
