Cherry, Grape And Coconut Crumble Bars
- Filling:
- 1 cup cherries, pitted and quartered
- 1 cup black seedless grapes, quartered
- 1 teaspoon Natvia
- 1 teaspoon cornstarch
- 1/2 teaspoon vanilla extract
- Crust:
- 3/4 cup wholemeal flour
- 1/4 cup oat flour
- 1/4 teaspoon baking powder
- Pinch of salt
- 1 tablespoon coconut oil, melted
- 1/4 cup 0% Chobani Greek yogurt
- 1/3 cup Natvia, or sweetener of choice
- 1/2 teaspoon vanilla extract
- Topping:
- 3 tablespoons rolled oats
- 2 tablespoons almond flour
- 2 tablespoons Natvia
- 2 tablespoons shredded coconut
- 1/4 teaspoon ground cinnamon
- 1 tablespoon coconut oil, melted
- Preheat oven to 175c. Line an 8 x 8 inch baking pan with parchment paper and set aside.
- Toss together all ingredients for filling and set aside.
- To prepare the crust, sift together flour, baking powder and salt.
- In a small bowl, stir together coconut oil and yogurt. Mix in Natvia and vanilla extract.
- Pour into the flour mixture and mix until just incorporated.
- Press dough into prepared pan and spread cherry filling on top.
- To prepare the topping, mix together all dry ingredients. Drizzle on coconut oil and stir well. Sprinkle topping over the cherry filling.
- Bake for 30-35 minutes, or until the crust is cooked. Set aside to cool on a wire rack for an hour before slicing into bars.
