Honey-Glazed Chicken Drumsticks With Rice Salad And Salsa (Lactose-Free)

  1. Preheat the oven to 400u0b0F. Grease a roasting pan. Season the drumsticks with salt and arrange in the roasting pan. Roast for 25 mins, or until the juices run clear. Mix the honey, 1/2 tsp cayenne and 1 tbsp oil. Brush over the drumsticks then return to the oven and cook for another 5 mins.
  2. Meanwhile, cook the rice in boiling salted water according to the package instructions. Drain, rinse under cold water and allow to cool.
  3. For the salsa, mix the diced tomatoes, pepper, chili, onions, lime zest, garlic and 4 tbsp oil. Season, add a pinch of sugar and a few drops of lime juice.
  4. In a serving bowl, mix the rice, tomato chunks, pineapple and peas. Mix the yogurt, 2 tbsp pineapple juice and 1 tsp cayenne. Season and add a few drops of lime juice. Add the coriander then toss with the rice mixture and season. Remove the drumsticks from the oven and serve with the rice salad and salsa.
