Individual Salmon Pasta Casseroles
- 12 ounces farfalle pasta
- 4 tablespoons butter
- 1 onion finely chopped
- 1 stalk celery chopped
- 1/3 cup flour
- 1/4 cup milk
- 14 ounces red salmon drained, flaked
- 3 ounces frozen pea corn and carrot mix
- 2 ounces cheddar cheese grated
- 2 tablespoons lemon juice
- crumble topping
- 6 ounces brioche bread torn
- 1 ounce cheddar cheese grated
- 1 tablespoon parsley chopped
- 2 tablespoons olive oil
- mixed salad greens to serve
- Preheat oven to 375u0b0F. Lightly grease six 2-cup ovenproof dishes. Cook pasta in a large saucepan according to package instructions. Drain well and set aside.
- Meanwhile, for the sauce, melt butter in a medium saucepan on high. Saute onion and celery 2-3 mins, until tender. Add flour and cook, stirring, 1 min. Remove from heat. Gradually add milk, stirring, until smooth. Season to taste. Simmer over medium heat, stirring, 3 mins. In a large bowl, combine with pasta, salmon, vegetables, cheese and lemon juice. Spoon into prepared dishes.
- For the crumble topping, process brioche in a food processor until crumbs form. Add cheese, parsley and oil. Pulse a few times and sprinkle on pasta mixture. Bake 15-20 mins, until bubbling. Serve with salad greens.
