Aloha Chicken Sausage Power Bowl
- 2 sweet potatoes medium
- 15 ounces garbanzo beans drained and rinsed
- 1 cup pineapple chunks
- 1 bunch bok choy or other bitter green, ie broccoli raab
- dressing Sesame ginger, to taste
- cilantro for garnish
- Rinse and cut sweet potatoes into wedges (like steak fries), skin on.
- Toss together with garbanzo beans, 1 tsp olive or sesame oil, and salt, pepper, garlic powder and chili powder, to taste.
- Bake sweet potatoes and garbanzo beans at 400 degrees for 30 minutes, until browned.
- Cook quinoa - 1 cup quinoa per 2 cups water. Pre-toast your quinoa in a skillet or wok for a nutty, toasted accent. Bring 2 cups water to a boil. Add quinoa. Reduce heat to medium, boil covered for ~15 minutes until water is absorbed and quinoa is transparent and fluffy.
- Heat your sausage and pineapple chunks on a grill or saucepan and slice sausage on the bias.
- Wilt bok choy in a saucepan until soft.
- Combine ingredients in a bowl and garnish with cilantro. Aloha!
