Aloha Chicken Sausage Power Bowl

  1. Rinse and cut sweet potatoes into wedges (like steak fries), skin on.
  2. Toss together with garbanzo beans, 1 tsp olive or sesame oil, and salt, pepper, garlic powder and chili powder, to taste.
  3. Bake sweet potatoes and garbanzo beans at 400 degrees for 30 minutes, until browned.
  4. Cook quinoa - 1 cup quinoa per 2 cups water. Pre-toast your quinoa in a skillet or wok for a nutty, toasted accent. Bring 2 cups water to a boil. Add quinoa. Reduce heat to medium, boil covered for ~15 minutes until water is absorbed and quinoa is transparent and fluffy.
  5. Heat your sausage and pineapple chunks on a grill or saucepan and slice sausage on the bias.
  6. Wilt bok choy in a saucepan until soft.
  7. Combine ingredients in a bowl and garnish with cilantro. Aloha!
