Sweet Potato Pie
- 2 c. mashed sweet potatoes
- 1/2 c. butter or margarine, softened
- 2 eggs, separated and room temperature
- 3/4 c. packed firmly brown sugar
- 1/4 c. granulated sugar
- 1/4 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/2 c. milk
- 1/4 c. granulated sugar (for egg whites)
- 1 unbaked 9-inch pastry shell
- 1/4 tsp. lemon flavor (optional)
- Combine sweet potatoes, butter, egg yolks, brown sugar and 1/4 cup granulated sugar, salt, flavor and spices.
- Stir in milk and mix well.
- Beat egg whites, at room temperature, at high speed of electric mixer for about 1 minute.
- Gradually add 1/4 cup sugar, a little at a time, until whites form stiff peaks.
- Fold egg whites into sweet potato mixture.
- Pour into pastry shell (unbaked).
- Bake at 410u0b0 for 10 minutes.
- Reduce heat to 350u0b0 and bake for an additional 45 minutes or until set.
