Espresso Chocolate Chip Banana Bread
- 1 1/2 cups wholemeal flour
- 1/2 cup sweetener Natvia, or granulated, choice
- 2 teaspoons instant espresso powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1/2 cup dark chocolate chips
- 1 1/2 cups bananas mashed, approximately 3 bananas
- 1/4 cup coconut oil melted
- 1 teaspoon vanilla extract
- 2 tablespoons fat free greek yogurt
- 2 tablespoons unsweetened almond milk
- 1 egg
- Preheat to 175u0b0C. Line a loaf tin with baking paper and set aside.
- Sift together all dry ingredients (except chocolate chips) in a large bowl. In a separate bowl, whisk together all wet ingredients. Add wet ingredients to dry and mix until just combined.
- Add chocolate chips and fold into batter.
- Pour batter into prepared tin and bake for 40-50 minutes, or until a toothpick inserted comes out clean.
- Allow to cool on a wire rack for 20 minutes before cutting. Serve warm.
