Shrimp Creole
- 1 1/2 lb. cleaned raw shrimp
- 1 c. chopped onion
- 1/2 c. chopped celery
- 1 c. chopped bell peppers
- 2 cloves minced garlic
- 2 tsp. parsley
- 1 tsp. seasoning salt
- 1/4 tsp. cayenne pepper
- 1 crushed bay leaf
- 15 oz. can tomato sauce
- 1 c. water
- 1/2 c. butter
- 3 c. cooked long grain rice
- Stirring constantly, cook onion, bell pepper, celery and garlic in butter until tender.
- Add tomato sauce, shrimp, parsley and other seasonings.
- Cover and cook slowly about 20 minutes or until shrimp are tender.
- (If too thick, add water.
- If not thick enough, mix a heaping teaspoonful of flour and 1/4 cup of water and pour into mixture, stirring constantly.)
- Serve over rice.
