Sage Scented Montasio Cheese Mini-Muffins
- 1 5/8 cups flour
- 5 5/8 tablespoons butter melted
- 3 11/16 tablespoons extra-virgin olive oil
- 2 11/16 tablespoons milk
- 2 eggs lightly beaten
- 1 teaspoon baking powder
- 9/16 tablespoon salt
- sage
- 1/2 cup Parmesan cheese grated
- 3/4 cup cheese montasio, coarsely chopped, can be substituted with asiago cheese
- Preheat the oven to 180C.
- Combine the flour, butter, oil, milk, eggs, baking powder, salt, two pinches of sage, the parmesan cheese, and the montasio cheese together until the batter is of a firm and uniform consistency.
- Place the batter in the mini muffin liners or in the muffin maker molds.
- Bake for approximately 20 minutes. They should be lightly golden. If using a muffin maker, cook the muffins for 10 to 13 minutes.
- Remove the muffins from the oven and sprinkle them with a mixture of parmesan cheese and sage.
