Akoori
- 1 onion large
- 2 medium tomatoes
- 1/2 teaspoon ginger paste
- 1/2 teaspoon garlic paste
- 2 Thai chilis or milder chili
- 1 bunch chopped cilantro finely
- 1 teaspoon salt
- 4 eggs organic
- 1/4 teaspoon red chili powder
- 1/4 teaspoon tumeric powder
- 1/4 teaspoon coriander powder Cumin-
- 1/2 teaspoon masala Pav Bhaji, optional
- 1/2 tablespoon oil
- 1/4 stick butter
- Heat the oil and butter together, and then add the chopped onions, ginger and garlic paste
- Fry the onions until they're browed
- Add the chopped tomatoes, all the spices, finely chopped chilis, and continue to cook it till the water from the tomatoes evaporates, making a pasty consistency
- Add the salt and the cilantro and remove from heat. Let the mixture cool down.
- Mix in the eggs and whisk them well into the mixture.
- Put this back onto medium-low heat and cook the eggs until desired doneness. Generally prefer slightly runny,
- Serve hot with toasted bread or indian chapatis/rotis.
