Chocolate Fudge Pudding Cakes
- 4 ounces semi sweet chocolate chopped
- 5 tablespoons unsalted butter chopped
- 2 eggs at room temperature
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 2 tablespoons flour
- 1 tablespoon unsweetened cocoa powder plus additional, for dusting
- chocolate chip ice cream to serve
- Preheat the oven to 400u0b0F. Lightly grease four 3/4-cup ramekins. Place dishes on a baking pan.
- Place chocolate and butter in a medium heatproof bowl over saucepan of simmering water (don't let base of bowl touch the water). Cook and stir for 4-5 mins or until mixture is melted and combined.
- Beat eggs, sugar and vanilla in a medium bowl with an electric mixer for 5 mins or until thick and creamy. Gently fold in flour, cocoa powder and chocolate mixture until combined. Spoon into prepared dishes.
- Bake for 10-12 mins or until just firm (the center will be soft). Remove from oven. Dust with additional cocoa powder. Serve with ice cream.
