Buffalo Sausage Bierock

  1. 1. In large mixing bowl, add ground pork, buffalo sauce, salt, pepper, celery salt, parsley, diced celery and jalapeno pepper Jack cheese. Mix well until thoroughly combined.
  2. 2. Portion into approximately 2 1/2 - 3 oz wt and shape into patties approximately 4" in diameter.
  3. 3. On griddle, sear each side of sausage patty and cook until approximately 160 degrees internal temperature and cool.
  4. 1. On flour dusted work surface, place sheeted dough in a single layer and brush with egg wash.
  5. 2. In center of sheeted dough, place approximately 1/2 oz wt of pepper jack cheese.
  6. 3. Place prepared sausage patty on of top cheese and press down, leaving approximately 1" ring of dough showing. Repeat process with remaining ingredients.
  7. 4. Without stretching dough, pull edges of dough to center, gather and pinch to seal. With palm of hand shape dough to round out edges as needed. Approximately 3"-3 1/2" in diameter and approximately 1 1/2"-2" tall.
  8. 5. On pan sprayed, parchment lined sheet tray, place dough ball pinched side down
  9. 6. With knife, pierce top center of dough going through the center creating a 1/2" vent
  10. 7. Evenly pan spray or egg wash outside of Bierock
  11. 8. Evenly sprinkle top of Bierock with a pinch of salt & pepper seasoning and a pinch of chopped parsley
  12. 9. Place in 350, low fan, oven and cook for approximately 8-10 minutes until heated through and is golden brown
  13. 10. Serve with side of Blue Cheese or Ranch dressing, carrots and celery sticks or additional buffalo sauce
