Peking Duck Lettuce Wraps
- 2 tablespoons vegetable oil
- 3 1/2 ounces fresh shiitake mushrooms finely chopped
- 1 shallot finely sliced
- 1 clove garlic minced
- 1 roast Peking duck, flesh finely chopped
- 10 ounces water chestnuts finely chopped
- 1 carrot cut into matchsticks
- 2 tablespoons shao hsing wine
- 1/4 cup hoisin sauce
- 2 tablespoons light soy sauce
- 3 1/2 ounces snow peas thinly sliced lengthwise
- 3 1/2 ounces bean sprouts
- In a wok or large frying pan, heat oil until very hot. Stir-fry mushrooms, shallot and garlic for 1 min. Add duck meat, water chestnuts and carrot. Stir-fry for 1 min. Deglaze with wine. Add hoisin sauce and soy sauce. Bring to a simmer and cook for 1-2 mins, until sauce thickens. Remove from heat. Add snow peas and bean sprouts. Toss to combine.
- Serve in lettuce cups.
