Spinach Roll With Black Sausage And Pepper Sauce
- 1 2/3 cups spinach cooked and drained
- 6 3/8 tablespoons flour
- 2 eggs
- 1 pinch salt
- 1 onion
- 1 tablespoon sugar
- 1 pinch salt
- oil Extra virgin
- 1 black sausage rice
- cream splash of
- 1 pinch salt
- 5 1/3 tablespoons piquillo peppers optional
- For the rolls, with a hand mixer, mix spinach, flour and eggs.
- Season with salt.
- Line a rectangular pan about 20x30 inches with parchment paper and pour spinach mixture in it.
- Bake at 180u0b0C (approximately 350u0b0F) for about 5-7 minutes.
- Remove from oven and roll the longest part. Let cool while rolled.
- For the sauce, dice the onion. Heat oil in a pan and caramelize onions.
- Season with salt and a tablespoon of sugar and let caramelize for over an hour over very low heat.
- Set aside.
- For the filling, peel and slice the sausage.
- In a frying pan, fry the red peppers and when they are almost done, add the sliced sausage.
- Let it cook and then add a splash of cream.
- Season with salt. Grind with an immersion blender and set aside.
- To assemble the roll, roll out dough and spread black sausage filling over the surface.
- Arrange caramelized onions on top and re-roll it.
- Divide the rolls in two to make individual servings.
- To serve, arrange on a plate with some roasted piquillo peppers, if desired.
