Ginger Pumpkin Cookies
- 1 cup brown sugar
- 3/4 cup butter soft
- 1/2 cup pumpkin puree not pie filling
- 1 egg
- 2 1/2 cups flour
- 1 teaspoon ground ginger
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 all-spice
- 1/4 teaspoon ground cloves
- 1/3 cup butter
- 2 cups powdered sugar
- 1 teaspoon vanilla
- 2 tablespoons milk
- 1/4 teaspoon ground ginger
- 1/2 teaspoon cinnamon
- 1/2 teaspoon pumpkin pie spice
- heat over to 350
- in a large bowl beat sugar, butter, pumpkin, and egg
- stir in remaining ingredients to form a soft dough
- shape dough into 1" balls, place on greased cookie sheet, slightly flattened
- bake 7-10 minutes
- Frosting: in a sauce pan heat 1/3 cup of butter over medium heat until golden brown
- remove from heat and stir in remaining ingredients
- spread onto cookies
