Healthy Vegan Breakfast Bowl
- 3/4 cup oats
- 6 dates
- 7 cups water
- 3/4 cup mixed nuts
- 1/4 cup shredded coconut
- 1 teaspoon cinnamon
- 1/2 apple
- 1 kiwi
- 100 milliliters frozen berries
- - mix the oats by themselves first, until a fine powder. then add the dates and mix again
- - gradually add the water, with just a little at first until all is added to your blender. you can pour through a sieve, cotton kitchen towel, or cheesecloth if you want, but i don't bother. it's just easier this way, plus i get all the nutrients from the whole oats. pour into clean glass bottles and keep in the fridge
- - toast the nuts, shredded coconut and cinnamon in a dry pan on medium heat for a few minutes until they're lightly browned and you can smell gorgeous nuttiness in your whole kitchen
- - store in the fridge in an airtight container, like a glass jar
- - mix apple and kiwi in the middle of a large bowl. add the frozen berries
- - pour as much milk as you want on top, sprinkle on some cocnutty mix and enjoy all that summery delightfulness ^^
