Fruit Pizza
- 14 Tbsp. unsalted butter
- 2 1/3 c. flour
- pinch of salt
- 3 Tbsp. sugar
- 2 egg yolks, beaten with 4 to 5 Tbsp. ice water
- 1 (8 oz.) pkg. cream cheese, softened
- 1/2 c. sugar
- 1 tsp. vanilla
- 3/4 c. water
- 1/4 c. lemon juice
- 1 c. orange juice
- 3 Tbsp. cornstarch
- 1 c. sugar
- dash of salt
- fresh fruits: bananas, peaches, strawberries, etc.
- Prepare pastry in food processor:
- Cut butter into flour; add pinch of salt and 3 tablespoons sugar.
- Slowly add egg yolk mixture.
- Process 15 to 20 seconds.
- Turn onto floured surface and press into a ball.
- Knead quickly until smooth.
- Chill 20 minutes.
- Roll to 1/8-inch thick and fit into pizza pan or cookie sheet.
- Bake 15 minutes at 350u0b0 or until golden.
- (Or roll out Pillsbury sugar cookie dough and put on pizza pan for sweeter crust.)
