Cinnamon Fruit Scones
- 1 3/4 cups self raising flour
- 1 pinch salt
- 3 7/8 tablespoons butter
- 3 1/3 tablespoons caster sugar
- 150 ounces milk ml/5fl
- 1 teaspoon vanilla essence
- 1/2 teaspoon baking powder
- 2 tablespoons sultanas
- 1 teaspoon cinnamon
- Heat the oven to 220C/425F/Gas 7.
- Mix together the flour, baking powder and salt and rub in the butter.
- Heat the milk for 20 secs and add the vanilla essence.
- Place a baking tray in the oven.
- Stir in the sugar, cinnamon and sultanas.
- Add the milk to get a soft dough.
- Turn on to a floured work surface and knead very lightly.
- Pat out to a round 2cm/3/4in thick.
- Use a 5cm/2in cutter to stamp out rounds and place on a baking sheet. Lightly knead together the rest of the dough and stamp out more scones to use it all up.
- Brush the tops of the scones with a little milk.
- Bake for 12-15 minutes until well risen and golden.
