Zucchini And Ham Soup
- 2 servings
- 1 tablespoon olive oil
- 1/4 onion chopped
- 1 garlic clove chopped
- 3 scallions chopped
- 2 ham slices
- coriander powder
- 1 zucchini large grated
- fresh coriander to taste
- 2 cups vegetable broth
- salt to taste
- pepper to taste
- 2 slices bread homemade toasted
- In a medium-sized saucepan, heat the oil, then add the onion, garlic, bacon, a pinch of coriander powder, and saute until the onion is translucent.
- Add the zucchini, coriander, and cook for two minutes without letting it stick, add the broth and if you find it's not enough add the remaining water, season (be careful in tasting it first, because the ham is already a little salty).
- Cook for five more minutes and accompany with a roast.
