Honey Cardamom Vanilla Pear Pie
- 1 pie dough 2 discs prerolled, refrigerated 9-inch pie dough. I love Leadbetters's French Picnic Pastry Circles
- 8 anjou pears firm D', peeled, cored, sliced into 1/2 inch slices
- 1/8 cup honey
- 1/8 cup sugar
- 1/4 cup all purpose flour
- 1/4 teaspoon vanilla bean ground, ground or scraped from a split vanilla bean
- 1/8 teaspoon ground cardamom
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground ginger
- 1 pinch saffron threads pulverized
- 1 tablespoon unsalted butter cut in small 1/4 inch cubes
- 1 tablespoon milk
- 1 tablespoon sugar
- 1 tablespoon unsalted butter melted
- Defrost your pie dough! Or make it from scratch and refrigerate. Just make sure you have 2 discs of dough for this pie.
- Preheat the oven to 350u0b0F (180u0b0C).
- In a large bowl, toss sliced pear segments with honey and sugar until coated.
- In a small bowl, combine flour, vanilla bean, cardamom, cloves, ginger, and saffron. Add flour and spice mixture to the pears and toss to coat.
- Fit bottom disc of dough into a 9-inch pie pan. Pour pie filling into pie pan and dot the filling with the tablespoon of small cubes of butter. Place top disc of dough on top of filling then trim (if needed) and crimp.
- In a small bowl, whisk milk and sugar with melted tablespoon of butter and brush mixture on the top crust to glaze the pie.
- With a sharp knife, cut three even slits in the top crust.
- Bake for 1 hour and 50 minutes. Cool for 3 hours.
