Fresh Pork Leg Scaloppini
- 2 bulbs fennel shaved
- 2 apples shaved
- 1 bunch cilantro chopped
- edible flowers As needed
- 36 ounces fresh leg of pork outside muscle, pounded thin
- 2 cups flour
- 2 pounds eggs
- 1/2 cup bread crumbs
- 3 tablespoons butter
- kosher salt As needed
- black pepper As needed
- 1 part verjuice
- 1 part lime juice
- 1 part olive oil
- 1. Pound fresh pork leg to 1/4-inch thickness
- 2. Bread pork using standard breading procedure
- 3. Melt butter over medium heat, add pork and cook 3 minutes per side or until golden brown
- 1. Combine lime juice and Verjuice, slowly whisk in olive oil
- 1. Combine fennel, apple, parsley, mint, shallot and garlic
- 2. Dress salad with Verjuice Vinaigrette
- 3. Garnish with edible flowers
