Enchanted Forest Cake

  1. Preheat oven to 180 degrees Celsius.
  2. In a bowl, whisk eggs with sugar until obtaining a whitish cream.
  3. Add the oil, slowly.
  4. Add the flour, baking powder, baking soda, and a pinch of salt.
  5. Stir to mix.
  6. Add the grated zucchini and nuts. Mix.
  7. Line a rectangular cake pan with parchment paper, and pour in the dough.
  8. Bake until brown, for about 50 minutes.
  9. Remove, and cool on a rack.
  10. Whisk the cream cheese with the sugar, and lemon zest and juice.
  11. Once it is completely cold, spread the icing on the cake.
  12. Garnish with pistachios.
