Enchanted Forest Cake
- 2 eggs
- 3/4 cup sugar
- 1/2 cup peanut oil
- self-rising flour 115 gt.
- 1 cup wholemeal flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- salt
- 2 cups zucchini grated, unpeeled
- 1/2 cup nuts coarsely chopped
- 6 2/3 tablespoons light cream cheese
- 6 2/3 tablespoons powdered sugar
- 1/2 lime juice and zest
- 13/16 cup pistachios coarsely chopped
- Preheat oven to 180 degrees Celsius.
- In a bowl, whisk eggs with sugar until obtaining a whitish cream.
- Add the oil, slowly.
- Add the flour, baking powder, baking soda, and a pinch of salt.
- Stir to mix.
- Add the grated zucchini and nuts. Mix.
- Line a rectangular cake pan with parchment paper, and pour in the dough.
- Bake until brown, for about 50 minutes.
- Remove, and cool on a rack.
- Whisk the cream cheese with the sugar, and lemon zest and juice.
- Once it is completely cold, spread the icing on the cake.
- Garnish with pistachios.
