Fiskefrikadeller Or Danish Cod Fritters With Remoulade Sauce

  1. Cut the cod into large cubes. pour it into the bowl of a food processor along with the egg, cornstarch, mustard, half and half, and lemon zest, mix to obtain a homogeneous filling, add the chopped dill lastly (if you mix it in, your croquettes will be a bit green ) pur salt and pepper. You may also use the bowl of your blender.
  2. Heat a pan with the butter and place the croquettes. You may do it with a tablespoon or use small pastry circles that you place in the pan to give a more rounded shape to your croquettes. Cook over low heat so that they become nicely browned, then gently flip them over.
  3. Peel and grate the carrots and mix with the chopped pickles.
  4. Mix mayonnaise, yogurt, mustard, curry powder, and lemon juice in a bowl with a fork.
  5. Stir in the vegetables.
  6. Grate the apple without removing the skin and add it to the remoulade sauce. Season with salt and pepper to taste.
  7. Serve the fiskefrikadeller with some remoulade, some chopped dill and steamed new potatoes.
