Chocolate Quinoa Fudge

  1. In a dry skillet, toast the quinoa on a medium heat until it begins to pop and is fragrant . Toss it a few times to ensure even roasting.
  2. Add Quinoa to a blender and blend until it resembles like a flour.
  3. Transfer it to a food processor. Add dates, coconut oil and cocoa powder. Process till it combines.
  4. Add 1 tbsp of water at a time till it forms a dough.
  5. Line a small container with a plastic wrap or aluminum foil. Press the dough on to the container and smoothen it with your hands.
  6. Sprinkle chopped almonds on top and refrigerate for 3 to 4 hours or until set.
  7. Remove from the fridge and cut 1/2 inch Squares.
