Chocolate Quinoa Fudge
- 1/2 cup uncooked Quinoa
- 8 mejdool dates pitted
- 2 tbsp cocoa powder
- 1 tbsp of melted coconut oil
- 3 to 4 tbsp of water
- 1 tbsp of chopped Almonds( optional) for garnish
- In a dry skillet, toast the quinoa on a medium heat until it begins to pop and is fragrant . Toss it a few times to ensure even roasting.
- Add Quinoa to a blender and blend until it resembles like a flour.
- Transfer it to a food processor. Add dates, coconut oil and cocoa powder. Process till it combines.
- Add 1 tbsp of water at a time till it forms a dough.
- Line a small container with a plastic wrap or aluminum foil. Press the dough on to the container and smoothen it with your hands.
- Sprinkle chopped almonds on top and refrigerate for 3 to 4 hours or until set.
- Remove from the fridge and cut 1/2 inch Squares.
