Iced Summer Fruit Puddings
- 10 scoops Carte D'Or Vanilla Ice Cream 250g/500ml
- 4 meringue nests ready-made
- 9/16 cup strawberries quartered
- 5/8 cup raspberries
- 4 3/4 tablespoons blueberries
- 7 1/8 tablespoons redcurrants
- 2 teaspoons runny honey
- 4 cherries with stalks for decoration
- Line 4 x 150ml ramekin dishes or small teacups with cling film and set to one side.
- Place the Carte D'Or Vanilla Ice Cream in a bowl and crumble the meringues over the top.
- Add half of the berries and gently fold in.
- Spoon the mixture equally between the 4 prepared ramekins or teacups and level out. Cover with cling film and place in the freezer for 1 hour.
- Make the berry sauce by placing the remaining berries in a blender with the honey and blitz until smooth.
- Turn the iced puddings out onto serving plates and remove the cling film.
- Serve each iced pudding drizzled with the berry sauce.
