Iced Summer Fruit Puddings

  1. Line 4 x 150ml ramekin dishes or small teacups with cling film and set to one side.
  2. Place the Carte D'Or Vanilla Ice Cream in a bowl and crumble the meringues over the top.
  3. Add half of the berries and gently fold in.
  4. Spoon the mixture equally between the 4 prepared ramekins or teacups and level out. Cover with cling film and place in the freezer for 1 hour.
  5. Make the berry sauce by placing the remaining berries in a blender with the honey and blitz until smooth.
  6. Turn the iced puddings out onto serving plates and remove the cling film.
  7. Serve each iced pudding drizzled with the berry sauce.
