Roasted Plum Oatmeal

  1. Preheat oven to 400.
  2. On a parchment lined baking sheet toss plums with 1 tablespoon of maple syrup, olive oil and cinnamon. Roast in the oven for 10 minutes, until soft, bubbly, and caramelized. Remove and set aside.
  3. Meanwhile, bring oats, 11/2 cups of the milk, water, vanilla, and salt to a boil in a medium saucepan. Lower heat and simmer 5 minutes until thickened. Stir in remaining 1/2 cup of milk and tablespoon of maple syrup. Top with a scoop of plums.
