Roasted Plum Oatmeal
- 2 plums pitted and chopped
- 2 tablespoons pure maple syrup divided
- 1/2 tablespoon extra-virgin olive oil
- 1 teaspoon cinnamon
- 1 cup quick cooking oats whole
- 2 cups milk choice, cow's, almond, rice, hemp, etc..
- 1 1/2 cups water
- 1 teaspoon pure vanilla extract
- 1/8 teaspoon salt
- Preheat oven to 400.
- On a parchment lined baking sheet toss plums with 1 tablespoon of maple syrup, olive oil and cinnamon. Roast in the oven for 10 minutes, until soft, bubbly, and caramelized. Remove and set aside.
- Meanwhile, bring oats, 11/2 cups of the milk, water, vanilla, and salt to a boil in a medium saucepan. Lower heat and simmer 5 minutes until thickened. Stir in remaining 1/2 cup of milk and tablespoon of maple syrup. Top with a scoop of plums.
