One Pot Pork And Beans
- 4 tablespoons olive oil
- 1/4 ciabatta thinly sliced
- 1 1/8 pounds smoked pork chop cut into cubes
- 1 onion medium, finely diced
- 1 red chilli small, finely diced
- 1 clove garlic finely chopped
- 1 3/4 cups chopped tomatoes tins of
- 6 3/4 tablespoons vegetable stock
- 1 3/4 cups cannellini beans tin of, drained
- 1 teaspoon dried thyme
- Heat 2 tbsp oil in a large saucepan and fry the bread on both sides until golden brown. Season with salt and pepper then drain on paper towels.
- Heat another 1-2 tbsp oil in the pan and cook the pork for 4-5 mins until browned on all sides. Add the onion, chili and garlic and saute for 3-4 mins.
- Add the tomatoes and stock, give it a good stir, cover and simmer for 20 mins, seasoning to taste with salt and pepper.
- 5 mins before the end of cooking, add the beans and thyme. Divide the stew into 4 bowls, break the fried bread into pieces and place on top of the stew.
