One Pot Pork And Beans

  1. Heat 2 tbsp oil in a large saucepan and fry the bread on both sides until golden brown. Season with salt and pepper then drain on paper towels.
  2. Heat another 1-2 tbsp oil in the pan and cook the pork for 4-5 mins until browned on all sides. Add the onion, chili and garlic and saute for 3-4 mins.
  3. Add the tomatoes and stock, give it a good stir, cover and simmer for 20 mins, seasoning to taste with salt and pepper.
  4. 5 mins before the end of cooking, add the beans and thyme. Divide the stew into 4 bowls, break the fried bread into pieces and place on top of the stew.
