Whole Grain Spaghetti With Szechuan Peanut Sauce
- 12 ounces whole grain spaghetti Mueller's
- 1 pound boneless skinless chicken breasts cooked
- 3/4 cup peanut butter
- 1/2 cup chicken broth
- 1/4 cup chili sweet, Thai sauce
- 4 tablespoons soy sauce
- 1 tablespoon balsamic vinegar
- 1 tablespoon sesame oil
- 1 teaspoon red pepper flakes dried
- 2 tablespoons green onion finely chopped
- 5 garlic cloves minced
- 2 tablespoons chopped cilantro
- Cook and drain spaghetti according to package directions.
- Cut cooked chicken into cubes.
- Combine remaining ingredients in a bowl and stir until smooth. Add sauce and chicken to the spaghetti and mix until evenly coated. Garnish with additional cilantro if desired.
