Beef And Beer Casserole
- 3 Tbsp. vegetable oil
- 3 lb. beef stew meat
- ground pepper
- 1/4 c. plus 2 Tbsp. unsalted margarine or butter
- 1 Tbsp. flour
- 12 oz. beer
- 1/2 to 1 tsp. hot sauce
- 1 c. thinly sliced, fresh mushrooms
- 6 medium onions, thinly sliced
- Heat oil in a large skillet; brown meat in oil.
- Season with ground pepper and remove to Dutch oven.
- Melt margarine in same skillet; add mushrooms and onions and sprinkle with flour.
- Cook and stir mushrooms and onions until onions are tender.
- Put mushrooms, onion, etc. into Dutch oven with meat.
- Add beer and simmer, uncovered over low heat, stirring occasionally until meat is tender, about 2 hours.
- Stir in pepper to taste and hot sauce. Cool.
- Cover tightly and refrigerate for 8 hours.
