Healthy Chicken Curry

  1. In a large skillet, heat oil over medium-high heat. Add chicken and saute until cooked through. Set aside and cover.
  2. Add onion and saute until tender. Add carrots and potatoes, stir. Add cumin, curry and cinnamon and stir in. Add flour and coat, cook for an additional minute.
  3. Add stock, bring to a boil, stirring until thickened. Return chicken to the skillet. Reduce heat to low and simmer until potatoes are cooked, about 20 minutes.
  4. Add peas and yogurt and stir in. Continue to simmer until heated through.
  5. Serve with rice and naan.
